CHOCOLATE COLA CAKE - my current fave, anybody want the recipe?

I am in utter lust with this cake, it's fab and the cola does the same thing to the cake as it does to Nigella's gammon - turns it into something wondrous......

Chocolate Cola cake
Ingredients
Oil for greasing
125g self raising flour
Generous pinch of Bicarbonate of Soda
1 heaped tbsp cocoa powder
150g caster sugar
1 egg beaten
1 tsp vanilla extract
125g butter
80 ml cola
125 ml milk

Method

  1. Preheat the oven to GM4, Grease a loose bottomed cake tin - lined with foil.
  2. Sift flour into a bowl. Mix in Bicarb, cocoa powder and sugar.
  3. Stir in beaten egg and vanilla extract.
  4. Melt butter gently in a pan.
  5. Add cola to butter and stir - do not boil. Stir in the milk and remove from heat.
  6. Quickly whisk in the cola mixture into the dry ingredients, mix gently but thoroughly.
  7. Pour mixture into tin, bake for approx 30 mins, until a skewer comes out clean.
  8. Leave to cool in tin for 15 mins.
Decorate with either a butter cream & cocoa power icing or Frosting as below

100g icing sugar
50g butter
1 tbsp cola
1 tbsp cocoa powder.

I thought the dc's would like this. However have just prepared the mixture and it looks awfully runny! Is that right? I thought maybe there should be some extra flour.

Anyway, I'll wait and see how it turns out.

yes it does stay quite flat but that's because it's lovely and moist in the middle, if you want it to be more of a sponge cake then yes you will need more flour.

It has quite a solid centre - a least mine does

Do you use regular or diet coke? Or doesn't it matter?

I use regular - I had some left after doing nigella's gammin - but supermarket own brand should be ok.

Made this cake this afternoon, Lucycat.
It was well recieved by everyone - there is none left!
I lined my tin with greaseproof rather than foil. It was fine.
