Has anyone got a lovely tagine recipe that's fabulous?

My Mum is coming over on Christmas Eve and id like to do a tagine with rice, maybe some flat breads, olives etc. I've made tagines before and they've been pretty successful. I think I've generally stuck to lamb. If anyone had a lovely recipe they wanted to share id be very grateful.

This one is surprisingly good for not so many ingredients. I make it quite a lot, and you can sub things in and out - so I regularly do it with lamb mince, and instead of using squash I use aubergine instead.
