I make a roast chickpea salad, roast them in lots of spices and herbs, I usually serve with a yogurt lemon dressing but just lemon it's still really good

Grated celariac with rasins or chopped dates and a mustard dressing is nice too, and it's good to use this rather overlooked vegetable.

Roast beetroot, white onion ,slices of squash and whole garlic cloves, when cold squeeze out the garlic and use to make a French dressing with honey mustard , slice up veg mix into prepared couscous add dressing. Just before serving add generous amount of chopped flat leaf parsley and sprinkle with pomegranate seeds (well it is Christmas!)

Another good one is nigellas spiced cauliflower and chickpea, but use more spices and seasoning than she suggests as the cauli and the chickpea both soak it up like crazy.

Cooked beetroot, thinly sliced onion and chickpeas with French dressing is simple and substantial, make it some hours before hand so it all goes pink.

Cooked drained noodles, thinly sliced red peppers, bean sprouts, peas in a spicy dressing is another substantial one.
