Soft Toffee recipe?

Hi all. Really hope someone can help me out.

I'm trying to save money on Xmas and am putting together hampers of homemade bits and pieces (mince pies, gingerbread, oranges&cinnamon bicuits, honeycomb, and peanut butter bulls eyes) I have my heart set on making chocolate turtles (pecan nuts topped with soft toffee and chocolate) but I don't know what toffee recipe to use. Or rather I need a uk recipe with weights and all the us ones just have cups.

Preferably just a butter,sugar, syrup, condensed milk style thing but I do t know whether I can just use a normal recipe and quickly pour out the toffee before it sets or whether that would be too chewy. I don't want to pull out any teeth or fillings belonging to my family and friends!

I've made this one by Dan Lepard before and it was lovely. You cook the caramel (toffee) for longer for a hard set and less for a soft gooey set. I did his soft set temperature and made little chewy salted caramels wrapped in paper.
