Sometimes people try and give vegetarians fish.

It is for my family. My DH eats fish but not meat so therefore no gletine.

I would start by putting in a food processor a pack of smoked salmon, the zest and juice of a lemon, enough creme fraiche to loosen the mixture and salt and pepper to taste. Blitz until you have a mousse like texture. Add a bit of horseradish to add some bite. Then line a small metal tin with smoked salmon slices, put the mousse onto the slices then fold over into a parcel. Refrigerate for at least half an hour.

Would that set enough to slice? I don't think I am confident enough in my abilities to do that without a recipe.

If you wrap it tightly enough and refrigerate it should, as long as you don't add too much creme fraiche. If it is a little loose then make quenelles instead of slicing it. We make this most years.
