Has anyone got good stuffing recipes?

I'm looking for a nice recipe for stuffing to go with xmas dinner. It can't contain sage as my dad hates it.

Pork sausage meat. Soak some prunes in Armagnac or brandy overnight. Chop roughly and add to meat, together with chopped parsley, lemon rind and fresh breadcrumbs.

Are you doing turkey? This chestnut bacon and cranberry one is good.
