Am planning to make this for friends coming round for dinner tonight.
Recipe says 60ml rum -can I use the old bottle of Bacardi languishing in my cupboard or should I go out to buy some dark rum?

Personally I wouldn't risk it withthe Bacardi. Why not go and get a miniature of rum - probabaly cheaper...and there's always the possibility that the shop assistant thinks you have a problem!!

I would - barcardi is rum just n a different colour. Alcohol won't go off - I would just use that if it was me and then spend the ten pounds on some really nice drink for the meal.

Thanks for replies-decided not to risk the Bacardi and was at Threshers just as it opened.
Was careful to stress to the assistant that I wanted the rum for cooking!

Thanks Dimpledthighs- it did go well but it was very rich-don't think I'll make it again-I'll stick to my tried and tested passion fruit pavlova.
