I posted a while ago bout my new diet for breakfast ideas, so I'm after some other things to eat.

Doc has said I have to cut dairy, eggs, red meat, and reduce carbs. Not entirely, but in real moderation - so vegan or vegan +fish/chicken? I'm getting quite bored of eating lentil and veg soup! I only cook for myself so I can batch cook.

Yes you can make risotto without dairy, you can get dairy free milk and butter, and even vegan Parmesan!
Curries are good, Bean chilli and rice, bolognese with lentils instead of meat...
You might like Deliciously Ella's books, or the Minimalist Baker website is great..

Roasting veg will be your friend here! Loads of flavour, easy to make and the variations are endless.

Yesterday we had a roasted beetroot and sweet potatoe salad with walnuts and apple. Simple vinaigrette. Delicious.

Peanut soup. Boil a couple of potatoes in some veggie stock until tender (they make the soup creamy without the need for cream), then add some frozen peace for a couple of minutes and blend.

Courgette, garlic and lemon zest pasta. As the title says, start by softening some onions, then add courgette and gently brown, add some garlic (make sure it doesn't burn) and and finally some chopped herbs (E. G. Rosemary or sage) and the zest of an unwaxed lemon. Mix with the pasta and half a cup of the pasta cooking water.

Also, Roasted Peppers and chicken stew as made by the glorious Rachel Roddy in the Guardian. She is amazing. Try any of her recipes that suit your criteria.
