Leftover cranberry jelly

No, i'm not so organised that we've had our Christmas dinner already!! I won a hamper this time last year and there was a small jar of Baxter's cranberry jelly. None of us are fans in this house so it has stayed, unopened, in the cupboard all year. Its best before date was end Oct 16 but this does not bother me as it's vaccum sealed and will be perfectly OK.

Any hints and tips for using it up? I was thinking maybe a sort of bread and butter pudding thing with custard and spread the bread with the cranberry jelly too?

I'd use it to make a dressing/sauce for a warm crispy duck salad. Yum

A spoonful stirred into gravy is very nice.

A spoonful stirred into venison casserole works well.
Also stirred into red cabbage, or into home made sausagemeat stuffing.

I like it with baked camembert as well! Wine

Brie and cranberry paninis

Or

Spread over a sheet of ready made puff pastry. Roll up into a sausage shape, chill then slice into pinwheels and bake until crisp. Drench in icing sugar before serving
