Brine recipe?

I have loads of dried herbs, and obviously sugar & salt.

I'm going to do a dry run with a chicken to test it.

Do you want to preserve something or are you planning to brine your turkey? I don't know if trying a chicken would be a good indicator as they are usually moister anyway? Try looking up a Louisiana / New Orleans deep fried turkey recipe as the normally inject with brine before frying. From memory, I think crab boil powder is normally one if the ingredients. If that is the sort of thing you are after I have a pack of Zatarains crab boil here, so can give you the ingredient list to recreate it.

It's ok I decided to wing it & made a brine. The chickens soaking for tonight.
