pasta with pesto - do you add anything else?

I haven't been on the ball with dinner and every meal we have for this week requires hours of cooking.

We have a jar of sundried tomato pesto, and we have some pasta.. I've heard a lot of people talk about pasta and pesto! Do you add anything else?

jackieno, that would make a perfectly respectable accompaniment for pasta without the pesto...

VeniVidiVickiQV · 22/02/2007 13:29

I add some spinach and pinenuts. Cherry tomatoes too if I have them.

It would work fine without the pesto, you're right bundle. I'd be happy to just eat the pasta and pesto on its own too, maybe with a sprinkling of parmesan. I think maybe it's a texture thing...

Sundried tomato paste, pine nuts, more pesto, drizle more olive oil, fried onions, fresh chopped tomatoes. Not all together, well not always.

Unless it is homemade pesto, then absolutely nothing else. Fresh green and tomato salad on the side and large glass of red...same as tommy...

can heartily recommend making your own

btw my own favourite cherry tomatoes thing is plop a few in a bowl, shove a blob of pesto on top (or just glug of olive oil and squeeze of lemon juice) and put into microwave on high for 1 min (longer if necessary) until squidgy. mop up with crusty bread..

DD loves pasta and pesto on its own. Not tried the tomato pesto but I assume it would still be perfectly good on its own.

DD also likes pasta with chicken breast strips, red peper strips and pesto.

Stir the pesto in completely to coat all the pasta.

for the kids I normally add a sprinkling of parmesan

funkimummy · 22/02/2007 13:51

yeah, lightly fry some diced onions, strips of bacon and some chopped mushrooms. My kids love it!

Pavlovthecat · 22/02/2007 13:53

bundle - I am going to do that right this second for my lunch....mmmmmmmmmmmmmmmmm

We put green pesto, greek yoghurt, chicken and broccoli all in together, very fast dinner, you can cook the chicken (dry fry) while the pasta is cooking. Bung all together, heat through, grate parmesan on top.

for green i grate a courgette into the pasta 2 mins before pasta is finished cooking then, drain and add pesto, creme fraiche and feta
for red i grate a carrot 3 mins before pasta finishes and do the same as above , this is for a quick lunch for kids, but often do most of the suggestions of the other posters,
a favourite is black olives, warm cherry tomatoes , and asparagus with green pesto and parmesan

We usually chuck in an assortment of veg, ie mushrooms, peppers, courgette, onion and then bacon too, yummy
