Could get ground cinnamon in the shop!

If you're cooking the apple from scratch, just pop the cinnamon stick in while it cooks down, then remove it when you put it in the dish to go in the oven.

I do this, and add cloves too - count them in and out!!

Greating the cinnamon stick helps provide more flavour with less cinnamon casia. If you don't want to grate the casia, you could peal some Ceylon Cinnamon bark and you won't need to use a whole stick.
