Inspire me please, what to do with fennel?

I've got fennel here and apart from roasting what could I do with it? Dc didn't like the roasted version even though they ate it - any other ideas?

We went to friends for dinner on saturday and they did a really nice chicken and fennel dish. It was a nigel slater one...

I've done a salmon and fennel en croute which was lovely.

Great the coleslaw sound like a good idea too. Thanks. I'm doing salmon today so I could try and add some fennel - for us, dc are having theirs as fish nuggets in chickpea batter.

Ooh, slice it really thinly ( use a mandolin (?) if you have one). Add some chopped chives, lemon juice and olive oil. Gorgeous - even my kids eat it.
