Oatmeal Cookies and Muffins - Increasing Breastmilk Supply

Giant Oatmeal cookies

Preheat oven to 350 degrees

1 cup flour 1 1/2 cups oatmeal
1 TSP cinnamon 1/2 TSP baking powder
1/2 TSP baking soda dash of salt
1/2 cup brown sugar 1/2 cup white sugar
1/2 cup applesauce 1 egg
2 TBSP butter 1 TSP vanilla extract
1/2 cup raisins* optional- chopped walnuts

Mix first 6 dry ingredients and set aside. Blend sugar, applesauce, butter, egg and vanilla until well mixed. Add remaining ingredients, drop by mounds of dough ( 3 TBSP each) about 2" apart on a greased baking sheet. Flatten. Bake 10-15 minutes until lightly brown around the edges. Cool on a wire rack.

*If you can find them, Sun Maid makes baking raisins in a pouch, they are wet and moist and superior for baking

Oatmeal Muffins

The Recipe:
1 cup uncooked oatmeal
1 cup buttermilk
1/2 cup packed light brown sugar
1 cup all-purpose flour
1 egg
1/4 cup canola oil
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp table salt
1/2 tsp ground cinnamon

  1. Mix oatmeal, buttermilk, and brown sugar together and let sit for 10 minutes
  2. Stir in egg and oil
  3. Sift- flower baking powder, baking soda, salt and sinnamon into a bowl nad mix well.
  4. Add to the oats mixture, stirring just until moistened
  5. Fill muffin cups
  6. Bake at 375 for about 25 minutes

(sometimes I add rasins, cranberries, or chopped nuts)

Caramel Oatmeal no-bake cookies

1 stick butter
1/2 cup milk
2 cups brown sugar

1 tsp vanilla
3.5 cups instant oatmeal
1 cup toasted wheat germ

Boil first 3 ingredients for 2 minutes

remove from heat and quickly add last 3 then spoon onto wax paper and allow to cool
