Very specific question about my Christmas cake.

Hi! So last year I made a simnel cake at Easter and a Christmas cake at Christmas - they were both Lisa Faulkner's recipes. The Christmas cake was nice but the simnel cake was GORGEOUS. So I'm thinking of just using the simnel cake recipe as my Christmas cake this year.

My question is, the simnel cake recipe has a disc of marzipan baked into the cake halfway down. It's one of the reasons it was so lovely I think! But if that was there could I still make the cake this week and keep feeding it or would the marzipan go all weird?

Hmm on googling people seem to think marzipan can't be kept long ... but it will be cooked inside! Could freeze it maybe? But then I can't feed it.... argh.
