Need to cater for vegetarians and gluten free - any ideas?

Can anyone suggest a lunch which will satisfy both gluten free and vegetarian diets? Ideally I don't want it to be too difficult, but want it to LOOK as though I've made an effort!!
(Perhaps I'm asking too much...)
All ideas gratefully received.

We do gluten free in our house as our dd is wheat allergic. Both our dcs are not at all keen on meat either so most of what we eat is veggie.

So what I'd suggest might be...

Rice with a veggie/ lentil based chilli, grated cheese, sour cream, guacamole, salad etc - go to town with that - you could serve tortillas for the wheat-eaters, or...

Jacket potatoes with a variety of fillings that people can help themselves to, or...

Veggie sausages (I think they're called caphilly sausages? with cheese and leeks. Very nice!) with gluten-free gravy and mash and veggies.

THe mainthing from a gluten-free pov is that the best carbs to use are either rice or pitatoes. You can get pasta alternatives etc but if you're cooking for lots of people I think it's best to stick with something familiar.

Good luck! Enjoy!

I think hulababy or lulumama had a similar dilemma and ended up doing mexian.

Would be great for you as you can do corn tortillas and loads of vegetable chilli and stuff. You can buy loads of extras and it looks like loads of effort but without loads of stress.

Mexican a good idea. Falafels also good, humous excellent with lots of veggies to dip in. Ratatouille. Veggie curry with rice and flat bread type things made from lentil flour, baked potatoes, there are loads of things and they are all tasty and usually healthy as well. Are you doing dessert?
