how can I use up this butternut squash?!

I have a load of butternut squash to use up and want to try something new for dinner.

It needs to be vegetarian, easy to make and preferably minimal ingredients.

I always roast the squash first, then fry it with onion and stock & milk, and then once soft, whizz it. Stick it back in the pan, add a teaspoon of curry powder (sounds weird but it's lovely), and serve.

Actual cooking time about 5 mins.

Another one for chips or wedges. Put a bit of olive oil on them and then rub in smoked paprika and chilli powder. Did it with sweet pots last week and took about 30 mins in the oven.

I've already made spicy squash soup and now have leftovers! Always make chips too so would like to try something different.

Jamie Oliver does a recipe with a peanut sauce (it's actually got chicken thighs but you could leave them out) and baked butternut squash and it is the nicest curry type dish I have even eaten

Butternut squash korma is lovely - just get some curry paste and a tin of coconut milk, nice comfort food!

We had this on Saturday. It was a big hit with 1yr and 4yr. I used vegan chorizo and creme fresh.

I put it in risotto and curry and Moroccan type stews. Also make a nice mushroom and butternut squash lasagne.

Butternut gnocchi.

Cut into chunks, microwave and mash. Let it cool down then add enough flour to form a dough. Wrap in clingfilm and put in fridge for an hour or so. Then roll out and cut into small 1cm sized pieces.

I tend to then fry them and either serve with pesto and loads of cheese or with a tomatoey sauce in a gnocchi bake.

They freezr well too.

Stuffed squash - roast it whole, then slice in half, scoop out the seeds, and fill that hollow with blitzed up walnuts, cheese and breadcrumbs. Maybe top with some cheese as well. Back in the oven till all lovely and warmed through. Serve with salad.

I have a butternut squash in the fridge right now simply so I can do the risotto, it is lovely and creamy.

As I'm on the app if I click the link to check I'll lose this page but I'm guessing the link a pp has put up is the one I use, I'm sure I got the idea from the bbc! The one I made was roasted butternut squash and Wensleydale, obviously Wensleydale isn't a vegetarian cheese but I suspect other cheeses are just as nice crumbled on the top.

butternut squash muffins! Left until the next day they so sticky and caramelised and taste delicious

200g wholemeal flour
200g grated butternut squash
100g of soft brown sugar
1tsp of baking powder
1tsp of cinnamon
2 eggs
90ml of oil

in the oven for approx 25mins delicious
