tiramisu (feeds 6):
make up some very strong coffee and leave to cool
4 egg yolks
2 egg whites
400g mascarpone
sponge fingers
grated dark choc
cocoa powder
150g icing sugar
- beat egg whites until stiff
- in another bowl, beat egg yolks with icing sugar until pale and fluffy
- stir in add mascarpone
- fold in egg whites
- put a layer of sponge fingers in the bottom of a dish and splash with the cooled coffee (with booze added if you like)
- add a layer of the mascarpone mixture, then grated choc
- add another layer of sponge fingers then more mascarpone
- refridgerate for min 3 hours
- before serving dust with cocoa powder/grated choc
