Mine always tastes abit meh

I made one last week which I thought was pretty good (though I did use mozzarella which I'm not sure if veggies can eat?)

Make a basic tomato sauce (fry garlic then add tinned toms, salt and pepper).

Grill slices of aubergine brushed with olive oil and seasoned

Starting at the bottom of the dish layers in this order:

aubergines
Tomato sauce
Lasagne sheets
Aubergines
Tomato sauce
Baby spinach
Mozzarella
Lasagne sheets
Aubergine
Tomato sauce
Mozzarella and parmesan (use veggie version of parmesan).
