Best cupcake recipe.

I'm doing a cake stall and need to make some lovely tasting and looking cupcakes. I am a good but basic cook and normally just do 2oz of marj/sugar/flour to each egg, but am looking for something a bit more special. Any suggestions would be gratefully received.

Use butter, not marge. Weigh eggs in their shells and use equal quantities of flour, sugar and butter. Switch 20% of your flour for cornflour and a bit of extra baking powder.
