I'm making chicken katsu and I've run out of honey- will sugar do?

Yeah I've made it with a little sugar before, it will be fine, just add it gradually so it doesn't go too sweet. I also used some mango chutney once and that worked out well too.

Ooh, a katsu curry? I've only ever used a Japanese bought sauce (for a tonkatsu curry) - is yours a make from scratch recipe? Please would you share? Yours sounds yummy already Smile

I don't strain the veg off, I blitz it all together with a stick blender. I double the quantity and freeze what I don't use. I also just use chicken breasts as health conscious ds prefers itSmile

We like katsu curry as well. I use this recipe:

Katsu Curry Sauce

1 onion, chopped
1 tbs vegetable oil
1 tbs plain flour
2 tsp curry powder
1 tbs brown sugar
1 tbs soy sauce
1 pint stock, chicken or vegetable

Fry onion and cook slowly for about 10 minutes. Add curry powder and flour and cook for a minute. Slowly add the stock and stir to avoid lumps. Add the sugar and soy sauce. Simmer for about 20 minutes. Blitz with a stick blender.

It's REALLY nice,just blended it and using the sugar and mango chutney is a great improvement.

I didn't put anywhere near the amount of soy sauce as stated in the link above so you'll have to experiment.

The best katsu sauce I have ever had was made with bananas and apples. I tend to use the golden curry blocks, because that is what my Japanese friends use. But try the banana in the sauce, it was good!

I know it sounds disgusting, but it tasted so good. You can't even tell there are bananas in it. I am also not keen on bananas, but I loved this!

I live in the uk now, but I use fruit also, grated up apples in mine with curry blocks, sometimes banana as well but mostly just apple.
