how can I make a 'light' sponge?

usually use the 'weigh-the-egg' method and the cake comes out tasty but not as light/moist as I would like.

usually bake at 170 (conventional oven) for 40 min for a 3 egg sponge.

Separate the eggs and make the cake mix adding a little milk to get the right consistency. Whisk the whites until really stiff, and then fold them in to the mix.

Ime gives a much lighter cake.

everyone upthread is correct - self raising flour, two tins, and i have stared using Flora buttery - but 180º (or 170º fan) does best for me temperature wise, - takes 20-25 minutes cooking.
