Or a nice brocolli cheese recipe. Thats about all I have without going out in the snow

put a big blob of butter...... about 30g ish in a pan

melt it

mix in about 2 tablespoons of plain flour so its quite sort of.... ummm. thick

then slowly add some full fat (or semi) milk... hmmm how much? well do it a little at a time and it WILL start to combine as a sauce

i reckon 3/4 of a pint ish APPROX

then great a bit bit of strong cheese... when u have a thick white sauce tak of the heat and stir the cheese in

sorry im not mroe specific with quantiites... i just do it!

u can out in some mustartd poweder as well if u like

1/2 tsp will be fine

not essential tho

cook your brocolli as tou would then pour sauce over the top

melt 1 tablespoon of butter, add 1 tablespoon of plain flour, cook together for a couple of minutes stiring. Add 3/4 cup of milk stir the whole time until it boils them cook for 1 minute. Add grated cheese to taste, heat until cheese has melted. I usually make about three times this amount and it never has lumps.

It is worth remembering that if your white/cheese sauce goes lumpy you can whizz it with a hand blender.

lump of butter an ounce or so i guess. melt.
add flour slowly until it forms a paste.
add milk slowly bit by bit, stirring all the time to turn the paste back into liquid.
bring to the boil gently and stir til thickens.
dump in a load of grated cheese.

cheats way:
Blanche broccoli for 2 minutes in water.
Drain and put in oven dish in oven, but put some of the cooking water into saucepan.
bring to boil add mascarpone/philadelphia
add strong cheese of your choice: gruyere good, or blue.
pour over veg, top with permesan and return to oven 30 mins.

shortcut cheese sauce

heat about 1.5 cup of milk

in a mug make a paste of flour and water

i use about maybe 1/2 cup flour and enough water to make a paste

when milk is heated add paste, add white pepper and your cheese about cup grated cheese and a small pinch of curry powder (different spin on the old cheese sauce absolutely delicious people always comment on how great my sauce is but they cant put there finger on whats diff bout it).

Keep stirring and voila.
