Hello - does anyone know how to cook meat (chicken thighs to be precise) in yoghurt without it separating? Is it a cooking method, or a particular type of yoghurt?
Ta!

No expert but my understanding/experience is that it needs to be full fat yogurt and you have to be very careful mixing it with anything acidic eg. Tomato and do it gradually when it's not too hot.

I cook a lot of currys in yogurt & find if I beat a desert spoonful of cornflour into half a pint of yogurt before adding it i never splits, whatever type of yogurt I use.
