Help!

Stuck in a TERRIBLE SHOCKING rut of crap food all the time.

I CAN cook, I work full time, lone parent 1x DS who eats a standard 3 year old diet so not great for me.

Please inspire me with your ideas for this week ...... :Grin

Those who have omelettes ..what do you have with them? I love an omlette myself (and will often have a small one for breakfast or lunch) but i know that family wouldnt consider it to be enough for dinner..

Pasta with caramelised cabbage, leeks and peas
Beanburgers, wedges and beans
veg balti, rice and chapatis
Spag Bol/veggie bol
Homemade soup and bread
Nothing very inspiring here!

Tonight we had jacket potatoes with smoked salmon, avocado and creme fraiche topping
The rest of the week I have planned:
Spare ribs, probably with the leftover jacket potatoes
Chicken burgers made with chicken mince and grated apple
Chicken strips cooked in lemon and pepper cream with rice
And that's about as far ahead as I can plan.

Love these threads, so inspirational.

Trying to clear out the freezers in preparation for filling them with make ahead Xmas food.

Sun - beef and ale stew with veg and mash for DD. Steamed choc pud & custard.
Mon - chicken tikka masala
Tues - sweet & sour chicken
Weds - picnic (picky bits) and champagne (anniversary)
Thurs - pasty, chips and beans
Fri - DD pasta, peas and pesto. Me, girls over for cheese and wine night.

OMG yes. Ginger beer chicken sounds amazing. Never thought of that. I think I 'd go:

Cpl of shallots
Add just browned chicken thighs or strips of breasts
Pak Choi (though fennel could work)
Oyster mushrooms
Mini corn cobs
Tbs flour
Pour in ginger beer
Stir and simmer
Add some really green leaves for colour (watercress?)

Serve with noodles and a bag of green stir fry.

Furrydog your menu sounds amazing but why oh why would you make a crustless quiche?!

Mon: enchiladas
Tues: pork and sweet potato casserole
Weds: mini salmon quiches with something
Thurs: cottage pie

Haven't got any further this week.

Tonight was cauliflower cheese and jacket potatoes
Tuesday - Lasagne ( a request!)
Wednesday- Borlotti Bean and Kale casserole with sausages
Thursday - Home made minestrone soup with crusty bread followed by cheese and biscuits
Friday - Griiled haddock with cheese topping , new potatoes, sprouting broccoli

Cauli cheese
Proper chips
Pork chop (with the bit of kidney in it
Mushrooms

My family hate it. If I visit my mother's I make it. It's too much for her now. It's a sadness they don't like it.

Wed- Slow cooker butter chicken with rice & naan
Thu- Toad in the hole with veg
Fri- Nigella's Spanish chicken & chorizo traybake

No idea, but I'm getting flustered at cooking time - PMS. Shopping tomorrow and meals are going to be largely of the prick with a fork variety.

Had made a load of hairy bikers' korma sauce, but making an anything orma for me and DH is complicated by making separate meals for the boys and it all seems to be too much for me, this week.

Sorry, I've been at work but back now with requested ginger beer chicken recipe. I base it on this Good Food recipe but don't do ribs and use chicken breasts. I skip stage 2, lay the chicken breasts on foil and pour the glaze on then make into loose foil parcel and bake for 15 mins then undo foil for last 10 mins to colour up the glaze and get in really sticky. Times obviously depend on size and thicken of chicken.

Thurs: DH sorting dinner

We had a roast chicken last night
Mon: chilli and rice with Doritos
Tues: chicken pie with left over chook
Wed: fish fingers for DS while we have pork snitzels and chips all round
Thurs: spaghetti and meatballs with dough balls
Fri: gammon with crusty rolls, coleslaw, salad etc

DC aged 4 and 9
