Potato Salad recipie anyone??

Yes, sad I know but I have no idea how to make one, as I've never tried it so I do not even know what is it in!

BBQ season is upon us and I would like to wow everyone with a really yummy one - they all think I can't cook - and they're right , so simple but tasty recipies gratefully received. TIA

Well my mum's potato salad just involves boiling chopping and salting some potatoes then mixing up about half and half mayonnaise and thick yoghurt, chopping as much gherkin and spring onion as you like, putting it all togeter and decorating with hard-boiled eggs - i like it!

hi cuppy, this is not the traditional potato salad, but it is really yummy and very easy!!

Roasted new potato salad (for 4 as side dish)

Scrub 500g new pots, then cut into thick slices. Toss in bowl with 3 tbs olive oil, 6 cloves of garlic (peeled and crushed), some thyme leaves. Scatter them in baking dish and roast in preheated oven at 200C/Gas6 (a good 50mn).
Remove from the oven, tip into a salad bowl and leave to cool for about 10 minutes. Whisk together a tbs of dijon mustard, 2 tbs of sherry vinegar, 60 ml olive oil, salt and pepper and pour on the potatoes. Eat whilst still warm.

I loathe potatoe salad smothered in mayo - can't touch the stuff. But I do love the following:

boil up new potatoes
Run them under cold water to allow them to cool a little bit
lightly coat in extra virgin olive oil, grate on parmesan cheese (it is nice to use quote a large grater, like you would for cheddar) and tear in some basil leaves

love it!

Make coleslaw too - very easy and always impresses people that you make your own!!

Carrot, white cabbage and onion - shred in food processor and then mix with half mayonaisse and half salad cream and lots of black pepper and a little white wime vinegar to combat the creaminess and bobs your uncle!!

Tomato & Mozzarella salad - slice big toms and mozz and layer onto plate drizzle with olive oil and lots of black pepper and ripped basil leaves - always goes down well.

Tomato salad - chop up toms and a red onion and drizzle with balsamic vinegar and lots of black pepper.

Kids always like pasta and tuna mixed with mayo and lots of black pepper.

Coronation chicken - lots fo nice chicken breast topped with a couple of jars of the Heinz coronation dressing you get in a jar - but add cashews and raisins and a bit more mayo to bulk it up!!

Ceaser Salad - Romano Lettuce, ceaser dressing and croutons and shavings of parmasan.

If you want something potato I always roast some new potatoes with lots of olive oil and sprigs of rosemary and lots and lots of sea salt - goes down a storm.

Chicken wings are a good nibble dish - nigel slater does a lemony one - is just loads of lemon juice and olive oli and slices of lemon cooked with chicken wings - it is really really yummy and I have been known to eat 10 all by myself before - oink oink - don't have the recipe here but sure someone will be able to give it to you!!

I also make a really simple pavlova which everyone loves - but it is a nigella one - recipe is in her Domestic Goddess book.

Good luck and all cooking is just science - follow the recipes and the chemicals/ingredients work together to give you the correct result.
