where do you get a year out of date from? Confused and even if it was a year out of date it would still be fine. They just lose a bit of flavour as time goes on and you may need 2 of them.

I'm a food hygiene auditor. It'll be fine.
It's a best before date, not a use by or expiry date. There is very little risk of contracting food borne illnesses from consuming food after its best before date. It's use by dates you need to observe, for things like soft cheese, meats and other high risk food. All the happens with an old stock cube is it it loses a bit of flavour and maybe dries out a bit. Make your soup! Hope it's delicious!

I'd use it.

A stock cube is very unlikely to have anything in it that might make you ill.

It just won't have as much flavour to it.
