Erm... 53 eggs?!

Through utter incompetence on my part, I have 53 eggs. How can I use this ludicrous volume, as I've given away all I can! Any suggestions happily received!

When we had chickens I was often overwhelmed with eggs :) Crustless quiches were my way of dealing with them, mostly. You could also separate them and freeze yolks and whites in plastic bags for future baking. Beaten eggs are supposed to be good for your hair, too.

Yep freeze them.

This used to happen to me regularly. We now make more of an effort to eat lots throughout the week.

I would:
Use 16 to make four quiches - pesto and feta is the favourite here. Freeze these
Use 4 to make Nigella's amazing lemon meringue cake

Then make batches of:

toad in the hole - these will freeze
yorkshire puddings - will also freeze
pancakes - will also freeze and are great to pull out in the mornings and zap for a few seconds in the microwave
muffins (you can freeze the batter).

Make up a few batches of meringues and store these for another time (they'll last for ages if sealed up)

Make up cookie dough and keep in the fridge for warm cookies throughout the week.

Eat lots of eggs every morning and omelettes for lunch for a while.

I have frozen eggs before but try to avoid it because we have so many fresh ones that they never gets used. They only get used when Ive turned them into something before freezing.

Make mayonnaise (google stick blender method), meringues, pavlovas, have scrambled eggs/fried eggs for breakfast, frittatas/tortia for lunch.

Egg whites freeses well, egg yolks don't freeze as well.

I am guessing you have your own chickens? I know it's a bit bad, but chickens really like scrambled eggs. It's good protein for them.

Op I would make a couple of quiche, pancakes to freeze and I'd also make a cake to eat over the next day or so.

Tea tonight would be toast in the hole
Tomorrow's lunch mushroom and cheese omelette

Yes pancakes freeze really well. We make batches of both english pancakes and american pancakes and the DC have them for breakfast during the week when we're in a rush.

Was it online shopping? What did you press? 5 boxes of 12?

How did you manage that? I accidentally ended up with 30 last week and thought that was bad enough!
We made cake and poor DS has been force fed scrambled eggs and omelettes. Still got fourteen left but they are dated for another week thankfully.

I'd have egg chips and beans for tea. Any excuse! Yum!!

They will probably keep well. I got 5 boxes of 6 at 10p a box a little while ago. The date was for the next few days, but I've never had a gone off egg . I regularly get a large box of eggs and they last weeks in the fridge

Lemon curd with the yolks and meringues with the whites!!

Basic foolishness was my sin. We get our eggs from a lovely local lady who usually deals with DH. In a moment of rashness, I took charge when she rocked up at the door, not checking our current stock level - she'd delivered two dozen the previous week too, and I'd randomly accepted two trays worth. Too daft to live.

Pancakes are going on the list, but will avoid quiches as they are my Mum's specialty, so they would only disappoint. I'll be attempting to freeze some and please could Atticus tell me where I'd find the recipe for such a heavenly sounding creation as Lemon Meringue Cake?!

I adore meringues, and intended to attempt making them so will try that, and am going to invest in my own Yorkshire Pudding tin and try them too.

My major concern is that my mum is bookbook and is an epic cook, as anyone who's tried one of her recipes might have an inkling! As such my cooking tends to be rather underwhelming!

And lemon curd! Yes!! Love lemon curd!!!

You can also freeze omelettes. And pancake batter.

A few bouts of boiled eggs for tea should reduce things nicely. Or eggs mornay (in a cheese sauce).

My top tip is not to get it almost perfect and then decide to put it under the grill for two minutes just to brown it slightly and then forget about it until the kitchen is full of smoke and its black on top. DCs and FIL still ate it all though!

My other top tip for the pancakes is to put layers of lining paper between each one so that you can just get a couple out of the freezer at a time.

pickled eggs! ...and if you like beetroot ...use beetroot vinegar and they will be pink.

Was just going to say pickled eggs, not my personal cup of tea but DH and the boys love them.
