Hello, I've thought of the usual cottage pie / lasagne / fishcakes / fish pie / vegetable sauces to cock and freeze when mat leave starts, am I missing anything obvious? I can't even remember what I usually eat and if it's freezable, there really isn't much hope for me.....Thanks in advance

How about mince with tomato sauce that can be turned into spag bol / chili / lasagna with a few extra bits, depending on what you fancy at the time?

I also did chicken enchiladas, lamb stew and a few one pot chicken recipes to make sure it wasn't just mince based dinners!

I liked soups. We still batch cook soups now as kids like them

Freeze in individual portions and can take out and microwave from frozen. Instant healthy lunch

Casseroles freeze the same. Can eat one handed
