Chicken breast inspiration

We don't usually buy chicken breasts but I have 4 looking at me in the fridge and with no idea what to do as we usually buy whole chicken and all I can remember is the insipid, dry, stringy meat that my mum used to cook in the name of being 'healthy'.

Can you hit me with some ideas? No stir fry or curry as those are not liked by DH and toddler respectively...

My kids likes it wrapped in bacon and cooked in the oven - sometimes plain or sometimes with barbecue sauce and grated cheese on the top (hunters chicken?). The cheese melts and makes a tasty sauce mixed with the bbq sauce.

Batter thin, marinate in lemon, garlic and rosemary - or similar. Then grill or pan fry. If they are thin they shouldn't dry out. Or stuff with goats cheese or feta and wrap in bacon and bake in oven. Serve with salad and something. Worth a try...

Or cut into thinner strips and coat with barbecue sauce or sweet chilli sauce, wrap in foil and cook in the oven

I have covered them in BBQ ketchup, grated cheese and wrapped in bacon. My 2 love them (I'm not a bbq sauce fan) and we have them with jacket pots.

Flexible Spanish chicken - fry onions chorizo,(or smoked bacon) peppers and chicken. Add smoked paprika, garlic and herbs. Add chopped tomatoes or passata and puree. Can add a tin of anchovies now if not using bacon. Cook until chicken done and sauce reduced. Green olives can be chucked in before serving.

I was going to say stuff with cream cheese and wrap in bacon, or stuff with feta and wrap in pancetta.

I also like cubing chicken and marinading in yogurt and tikka paste/spices, then skewering and frying.

Goujons... cut into strips and then flour, egg and breadcrumb and bung in oven or shallow fry for crispier ones. My kids love these... I usually put rosemary and grated parmesan in the breadcrumbs.

Chicken and chorizo rice - similar to Spanish chicken recipe above - but once all is browned and herbs/spices added, add rice and stock and cover and cook until rice is ready. Boys love this with some natural yoghurt in it and DH and I top with hot sauce, yoghurt, jalapeños and chopped spring onions

put a blob of pesto on top with some crumbled feta. Roast in foil. Very easy and my DC love it.

Or cook it in a bit of tagine paste with some halved cherry tomatoes and a few strips of pepper, roast in foil. Again, it takes two minutes.

Thank you - i've gone for stuffing them with feta and wrapping in bacon. Had a bit of a mare with the kids today so will make tomorrow.
Thanks all - some nice other ideas to try if we get some more - which is likely as have discovered a new butcher who does them on offer...
