Rhubarb crumble

Do I need to cook the rhubarb first when making crumble?

I tend to give it a blast in the microwave before putting crumble on top then oven cooking. Means I can check if it needs more sugar.

do it in the oven ..it's much nicer and less likely to end up as a mass of nasty greeny rhubarby strings

I chop and wash, don't dry it, leave it wet and put it in to the dish it will be cooked in...add in plenty of sugar ...add in any other flavourings now. I often use a squeeze of orange juice plus the zest, or sometime a bit of chopped crystallised or stem ginger, splash of rosé wine if you have any lurking

Let it sit in a hottish oven for about half an hour and the sugar will make the rhubarb quite juicey, but not swimming

Sprinkle the crumble on the top and set it back in the oven to finish.

Thank. I went for the oven method. I put too much ginger in but it was still good.
