Would someone give me a bit of help in quantities for a buffet for 30/35 please?

This is the menu (feel free to comment) It's for my mum's 80th birthday, so if it looks a bit unadverterous, I'm doing something for the age range that will be there, only my children and an average age otherwise of about 65!

Delia's Salmon Coulibiac - will two be enough or shoudl i do three??
Pancakes stuffed with mushrooms - one per person?
Jackets with cheese and onion - one per person?
Cooked meat - about 1/4 lb per person?
Bread - selection fo about 30/40 nice little rolls?
Pasta Salad - no idea how much to make!
Green salad - and again!
Crisps and Olives - few bags/jars
Pizza - I thought 5 cut into 8 each?
Crudites and dips - no idea
Fresh Fruit salad - no idea
Tiramisu. - my recipie serves six so would you make enough 24?

Thoughts and opinions please?

IIRC, when calculating quantities for a buffet to serve more than about 12 people, you calculate 6 portions of savoury and 2-3 portions of sweet foods per person, rather than making enough of everything for everybody. (Unless you're my mum - in which case you make more than enough of everything for everybody!)

You have to consider if people will be eating a proper meal before coming or if this will be the main meal of the eveing, depends on time and normal eating times of your family.

From my leiths cookery book...
" As a rule the more people you are catering for the less food perhead you need to provide"

"Bread and butter- 1&1/2 slice per person"
"French bread- 1 large loaf for 10 persons"

"Canapes- 10 per head,
canapes 14 per head if served at lunch time,
canapes 4-5 for pre dinner"

"Salads- allow 1 portion per person if serving one kind, increas quantity of each kind if more than one salad offeres."
"Green sald- a loose handful of leaves per person ie a large cos will serve 10, dutch hothouse will serve 4"
"Potato salad- 1lb of potatoes serves 5"
"Tomato salad- 1lb of tomatoes (6 toms) serves 4"

"large whole fish- 120z to 1lb per person (preprepared weight)"

"Fruit salad- allow 8 oranges 2 apples, 2 bananas and 1lb of grapes for 8 people"
"Mouse- made with 1/2 pint for 8 people plus 1/2 pint whipped to decorate.

Thanks - it's a buffet instead of a meal, at least I hope no one eats before they come!
