Healthy recipes good for batch cooking?

Looking for inspiration here, I want some healthy recipes full of veggies and low in carb (so no lasagne!) that I can portion up and freeze

At the moment, I make:
Chicken and ratoutouille
Bolognese sauce
Thai turkey burgers
3 bean chunky soup
Coconut lentil soup

Anyone got any other good recipes? Is salmon wrapped in foil with herbs and butter etc good to go straight from freezer to oven?

I'm trying to think what we eat now!

Sausage casserole
Tuna pasta (actually doesn't need frozen as it's quick )
Chicken curry
We do a quick pork mince dish, stir fried with bean sprouts and red pepper, soy sauce abd oyster sauce, toss noodles through and add fresh coriander.

You seem to like a bit spicier food than us but I love Shepard's pie, beef stew, pork chop casserole (add chopped apples etc)

I do a tomato based cajun chicken stew in the slow cooker...easy meal when we get in from work and freeze leftovers if my DH doesn't take it for his lunch the next day!
