Fairly healthy muffin recipes please

Ds is now required to take healthy snacks to school for break.

I'm struggling for ideas, as they get fruit anyway.

I thought I would bake something as a treat for a few days a week. Could you share your recipes please, I bought wholemeal flour today as a start Smile.

Check what "healthy" means. It might mean fresh fruit or veg only.

Well a lot seem to be taking crisps etc in, which I won't be doing, so trying to come up with a few things that are better for him than that, but so he won't feel like he is missing out too much.

Dan Lepard has a great recipe for apple and black treacle muffins. Not as healthy as carrot sticks but better than most bough muffins with refined sugar etc. I prefer without the caraway.

It's probably not exactly what you mean, but my kids love egg muffins - chopped veg (today I used courgette, salad onions, red pepper and spinach) mixed with some chopped ham or chicken, put in a muffin tray, add whisked egg then top with grated mozzarella. Bake for about 20 mins. They're like little pastry-free quiches.
