It has been my lifetime pursuit! Tried all sorts of different methods but have now discovered -- take your large potatoes and bung in microwave till almost cooked ( about 4 mins per large spud). let them go cold, cut into chip shapes, put into a freezer bag with a teaspoon or two of oil, little salt and pepper. gently massage then bung on oven tray in hot oven for about 25 - 30 mins. sensational! think it must be something to do with getting rid of excess water.
