Autumn recipe inspiration

Cococrumble · 04/09/2016 20:33

Please can you inspire me with your favourite meals to cook during autumn?

We are stuck in a rut of shop bought bung in the oven stuff and curry/bolognese/chilli so I'm using the new season as my fresh start!

Looking for comforting homey things for when the weather turns please Smile

No allergies and no real dislikes apart from lentils.

Thanks!

Butternut squash risotto, loosely based on this bbc recipe: www.bbcgoodfood.com/recipes/7767/butternut-squash-and-sage-risotto

yy to risotto - I do butternut , chicken and leek , and mushroom
paella - a big favourite here
chicken breasts stuffed with cheese and pasta, wrapped in pancetta
macaroni cheese ( I often add peas and bacon)
fish wrapped in foil cooked in the oven
quiche with jacket potatoes
chunky soup with crusty bread

I love comfort food for autumn and winter (and fresh spring food, summer BBQs etc - I'm a glutton...)

Pulled pork or beef (sear then bung in slow cooker), good with jacket potaoes then leftovers in tortillas or beans added for sort of chilli. This is a good recipe though I add less liquid smittenkitchen.com/2010/01/southwestern-pulled-brisket/

Beef/ venison casserole
Steak and kidney pie
Sausage casserole
Fish pie
Toad in the hole with onion gravy

Roast glazed gammon - boiled initially with onion and carrot then make pea and ham soup with this stock and gammon leftovers.

I just popped back on here, read down and realised that I put down chicken breast stuffed with cheese and pasta - it should be pesto! :)

I fancy that too Coco - so I'm also interested in the recipe :) I usually do this, though not a casserole.

We love goulash, basically beef or pork with paprika and tinned tomatoes served with rice or mash. Apologies to any Hungarians,

JemimaMuddledUp · 05/09/2016 17:36

This pork and apple casserole recipe is roughly what I do, although sometimes I add more veg.

Sorry. Forget the Dahl missed the bit about not liking lentils!
