BBQ For Foodies

I'm hosting a (very!) foodie couple for a BBQ and although we've got the sausages sorted (swanky butchers sausages), what else can I do?

No funny eaters - apart for DP, but he'll have to cope!

I'm trying not to end up with only sausage-inna-bun.

Marinated halloumi kebabs - marinate in chilli and olive oil or herbs and olive oil and skewer with red/green peppers
King prawn and veg parcels and or skewers again marinate
Venison steaks
Scallops
Scallop and chorizo skewers
Monkfish
Blackened cod

Pork shoulder steaks marinated in double plastic bags overnight in Hellman's american smokey bbq sauce. If they are proper snobs you can always say you made the marinade yourself...

Marinated pork is THE most tasty thing to BBQ, as any very foodie person will tell you. Wink
And easy and forgiving.
Have fun!

MARBLED marinated

VanellopeVonSchweetz99 · 31/08/2016 19:17

Sides:
Smashed potatoes (my friends love them so much they are now known as Vanellope potatoes):
damndelicious.net/2014/02/14/garlic-smashed-potatoes/

and
a cold sauce/dip made with 50% mayo, 50% sour cream, salt, pepper, lemon juice to taste, finely cut chives

lord I'm hungry now

Butterflied leg of lamb. Marinade in whatever you fancy - I like something yoghurt based and to serve spare on the side - and that's it. Jamie has some good ideas.

Also pork, as a PP said. But I'd definitely make your own BBQ sauce - it will take 10/15 mins and will knock socks of Hellman's.

Basically your answer is to do joints if meat. And an interesting range of sides - maybe a homemde slaw, some sexed up couscous, etc.

Highlove · 31/08/2016 19:24

Oh - if it's just you and another couple I'd lose the sausages, do a single joint and some sort of BBQ veg. Halloumi and aubergine marinaded kebabs as a starter. And a fancy chocolate tart for pud. This www.jamieoliver.com/recipes/chocolate-recipes/rich-chocolate-tart-with-salt-flakes/#4IKs3KOKzRqjG0IV.97 is dead easy but looks suitably foodie served with a few raspberries and some creme fraiche.

Camembert is a must!

VanellopeVonSchweetz99 · 31/08/2016 20:26

Highlove would love a good recipe for BBQ sauce if you have one - and the big question is: To include 'liquid smoke' or not?
(I just can't seem to find the right balance, hence resorting to Hellmans)

Alternate smoked bacon and (natural) glacé cherries on skewers.
A whole pork tenderloin marinaded in whatever you fancy
Chicken pieces in yogurt, lemon and garam masala
Lots of cous cousy sides

A metal dish for bananas and peaches to steep in Baileys (I know) over the dying coals is a must. Serve with ice cream

Hoppinggreen · 31/08/2016 22:13

Spatchcock chicken
Marinade it and then cook in the oven and finish on the bbq. Also parboil some new potatoes and then wrap in foil and stick on the bbq as well.

Vanellope - I like this one www.jamieoliver.com/recipes/chicken-recipes/the-best-bbq-chicken/ It doesn't nevessarily need to go with chicken - it works equally well with other meats. And make sure there's plenty leftover for dipping!

idontlikealdi · 31/08/2016 22:32

Thai marinaded sirloin - in a piece not steaks.

Griddled Malibu smoked pineapple for deserts.

I wouldn't do sausages.

1frenchfoodie · 31/08/2016 22:39

I'd do satay chicken skewers. Peanut sauce and marinade can be done in advance and satay is so much better over a BBQ than under a grill.

roseteapot101 · 31/08/2016 22:52

pork belly marinaded in reggie reggie sauce for 24hrs then bbq is amazing

easy home made burgers,500gr beef mince,1 eggs, lea perins, grated onion,1 stale finely grated crunchy roll mix well

potato salad made with baby potato, onions and salad cream is really good

SheDoneAlreadyDoneHadHerses · 01/09/2016 00:57

Lovely ideas, thanks!

Realised how much of a food nightmare DP is: no couscous, no potato salad, no bananas, no onion, no leeks, no coleslaw, no mayo, no salad cream, no pineapple.

Arsehole. Sausage-inna-bun for him!
