How would sprinkling in some parsley do?

SOH you've just reminded me - potato pancakes too! Unfortuantely can't remember proportions (there are def recipes for these online)but you whizz the mash with eggs, double cream and flour, dollop into frying pan and fry both sides. A bit more effort but excellent - love em with smoked salmon with soured cream mixed with dill & lemon or just with baked beans. I love potatoes, I do!

I use a big big sweet potato per person, with a small normal potato per person too. And mash it with butter. Lovely.
