Have been given done rather nice pancetta but nearly every recipe I can find seems a little hard to adapt to dairy free.

Anybody got any suggestions?

My favourite recipe of all time is flatbreads topped with fresh figs, Brie and pancetta, sprinkled with toasted pine nuts and honey.

I use it in my spag Bol, adds a lovely flavour

I also fry it off, cool it down and add it to my bread mixes.

I use it in a version of shakshuka - fry off cubes of the pancetta. Take out the meat but leave the fat, and use the same pan make a nice thick, rich, garlicky tomato sauce, possibly with a bit of chilli or paprika. Add the mean pack in. Spoon into an ovenproof dish, crack a couple of eggs on the top and bake till they are set. All it needs to serve is some
