Easy make-ahead dinner

I'm going out on Tuesday night and need to leave some dinner for DH and DS(10).
Ideally with minimum washing up for them.
And I am a dreadful cook so something fairly basic! And cheap! Ha

How about chilli? You can make it a few days in advance and is just one pan. Then your DH will just need to cook rice - or you could just get a few of the microwave sachets

Chicken skewers, sweet potato wedges and salad.
Marinate and thread skewers in advance leave covered on baking tray in fridge.
Cut potatoes into wedges and put in bag with splash of oil and seasoning. Both then just need bungling in the oven and serving with salad.
