What to do with 1kg carrots?

I needed a few carrots in my shop and ended up with a kilo of them as asda had 1kg for 10p as they were 2nd class grade (not that can see the difference, no crazy shapes, perhaps slightly bigger than the standard 60p a kilo ones)
I could make a batch of carrot soup for the freezer but does anyone have any more interesting ideas?

No butter beans involved- I also didn't have a bouquet garni so didn't use that but followed the rest. Beautiful!

Carrot & coriander soup
Carrot & hummus.

Oh carrot chutney is nice on a cheese sandwich.

I do Thai carrot and coconut soup. Cook off a generous couple of tablespoons of frozen Thai spices, along with some extra chilli if you like it, in some oil. When they're all fragrant, add 500g carrots, peeled and chopped and one large or two medium potatoes peeled and chopped. Cover with stock (veg or chicken), simmer until cooked, remove from heat. Blend with a hand blender. Add coconut milk to taste, season. It's delicious - and came about as a result of an online shop cock up :)

Loads of great ideas, I may have to go and buy another bag or 2!

I was just about to post the spiced carrot and lentil soup link, but Jemima beat me to it. I make this or a variation of it all the time. Red peppers, squash, sweet potatoes, ginger all make great additions.
