Tell me your best tomato sauce recipe

Just that really. I'm doing spaghetti and meatballs tonight and usually make my own meatballs but had to get ready-made ones this time so need a really good punchy in-your-face tomato sauce to go with them.

What can I add to make it more special?

Red onions cooked slowly in olive oil until caramelised, balsamic vinegar to deglaze the pan, passata, basil and black pepper.
Or that's my version of a great tomato sauce that my teen dc love too.

I do pretty much what Stoneagemum does, with garlic and sometimes crumble one small dried chilli pepper into it for extra kick.

I add a splash of tobasco to mine i dont caramlise my onions though that sounds lovely the rest is the same

Marcella Hazan's tomato sauce with just a tin of toms, an onion & butter.

It is amazing.

If your tinned tomatoes are not of the finest quality you will need to add a pinch of sugar at the end.
