Recipes for sour/sharp eating apples?

The apple tree in our garden (not sure what variety - definitely not crab though) is starting to yield some lovely fruit. However we picked a few (maybe a bit too early!) of those turning red and they are a little sharp.

Do any wise MNetters have any good recipes to use them up? I have used cooking apples in the past for crumbles, pies etc but am not sure if these bad boys will just disintegrate if I cook them that way!
