Salad help please

I need a simple and tasty bean salad recipe. One that will transport ok in a lunch box.

Also need inspiration for cous cous and quinoa

Dd has requested some salads for her lunch box in september.

And does anyone know if pine nuts are classed as nuts or seeds? School has a nut ban

I've had a gorgeous quinoa with roasted veg salad - just make up the quinoa, roast whatever veg you've got (beetroot, carrots, butternut squash, onion, celery, peppers all roast nicely) then just mix it all together.

I bought quinoa as I had it out and it was lovely. It tasted just of lemon juice and had spring onion and cherry tomatoes so I am hoping there was no other ingredient and its tasteless.

Sorry skim read the OP - I suspect you'll have to leave them out but think the good food one will be absolutely fine without the pine nuts - there's lots of flavour in there!

Bean recipe- mixed bean or white beans with parsley, red onion, cubed cucumber and tuna, you could also cube up some peppers or halve cherry toms, plenty of black pepper and salt, olive oil and vinegar of your choice or squeeze of lemon. Holds up well in the frige for a couple of days too

Pine nuts are actually seeds, so they should be ok.

Waitrose do some really nice flavoured cous cous packets which I add roast veggies to and chicken if we have had a roast recently
