Borlotti beans from garden...

We have grown borlotti beans this year, and they are ripening fast, but we are likely to have fairly small quantities at any one time.

Any recipes? The ones can find use lots, and start from dried beans?

Simmer them with tomatoes and coriander, lovely. Make a kind of hummus with them.

I grow borlotti beans. I actually open freeze them, after the pods have started to dry out. That way, they don't need soaking when I use them, just cook them for about 15 minutes ( as in recipe below),
This is my favourite recipe, and it freezes well too :)

Lucky You Teacher I steam mine in the pods and make a tuna salad with them (using red onions, and dried herbs and garlic. As hoolio says the hummus made with them is much nicer than with chickpeas (they give me nasty wind ). {blush] sorry.
