What to make with 4 fresh coconuts?

I have 4 coconuts left over from DD1's party (coconut shy)
Seems a shame to just throw them but have no idea what to make with them?
Something easy.

Oooh I love coconut. Would be tempted just to drain out the coconut water to drink and then just eat the coconut flesh. Mmmmm.
