Im craving chicken fahitas, but walked past the ready made 'kits' in favour of making it myself [domestic goddess emoticon] so im trusting mn to tell me how, i have chicken breasts, red and green peppers, onion, tortillas just need help with spices as i normally chuck in a packet

gucamole (pot cost over a pound now so i bought two organic avocadoes for less just need to know seasoning for gucamole

Mash the avocado with a fork, add in one crushed clove of garlic, pinch of dried chilli and some lime/lemon juice. If you leave the stones in the guacamole then it stays green far longer. I love the stuff.

Start with garlic and chilli (use powder if you don't have fresh), ginger and coriander if you fancy them, and the vital ingredient, smoked paprika.

Guacamole just needs lime juice and black pepper IMO.

guacamole:

chop onion, tomatoes, add juice of a lime or two, season well, chopped coriander. (no garlic in mine)
Set aside in fridge for a while until half an hour before you want to eat.
add avocadoes, mash with a fork if soft enough, leave a while for flavour to spread. or eat straight away if you dont have time.

For the chicken, I sprinkle with paprika and grill. For guacomole, mash advocado and add a dash of lime juice, a coupe of spoons of sweet chilli sauce and some sour cream.

If you want a sauce you could fry onion and garlic, add a teaspoon each of cumin and chilli powder and some chopped chillis if you have them, then add a tin of tomatoes and kidney beans.

ok, i have smoked paprika unopened in cupboard so thats a good start, no ginger or coriander though would powder do? or i have frozen cubes of mixed blitzed ginger garlic?

For future reference, (no good to you now though!) I buy the Schwartz Cajun seasoning and sprinkle liberally over the chicken, then I add lime juice, lime zest, a little olive oil and some black pepper and crushed garlic and massage it into the chicken, then leave to marinade for a couple of hours.
