Nice simple recipe for chicken thighs please

I sometimes do a tray bake with them. Olive oil in a roasting tin heated up in the oven, then throw in par boiled new potatoes, chicken thighs, garlic cloves, onion quarters and courgette wedges plus any herbs you fancy then pour a tin of chopped tomatoes over the whole lot and season. Bake for about 40 mins.

You don't need extra carbs because of the potatoes but the juices are good mopped up with crusty bread.

Make a marinade with oil, lemon juice, garlic and parsley, sit them in it for about ten minutes. Get frying pan or griddle really hot and cook thighs for around 8 minutes, turning a couple of times. Have with rice or flatbread and a salad.

Pan fried with garlic and herbs

  • Butter/oil in pan, heat till sizzling, brown thighs both sides. Turn heat down to medium and add a few squashed but not peeled garlic cloves, and scatter on some herbs (thyme is good). Add lid and cook for further 15 min till juices run clear. You can add some cream to the juices to make a sauce if you want. Good with potatoes and green veg.

Honey and soy sauce

  • Mix up honey and soy sauce, brush onto thighs, grill under medium grill (watch it's not too hot or honey will burn). If you can be bothered you could mix some crushed garlic or ginger or chilli in with the glaze. Good with rice and stir fried veg.

We tend to do tray bakes as well. Usually with chorizo, peppers, onion, tomatoes, garlic and paprika. Think its a hairy bikers recipe and its lovely. Easy for a quick dinner as well.

I don't peel them, but if they're on the large side I'll chop them in half.

Fry onion garlic and herbs. Add a tin of toms and some chorizo. Put the chicken in and bake til done. Green olives are nice in it too.
