I've got teh SilverSpoon Italian bible at home and they have about 15 different kinds but all only have a max of 5 ingrediants each.

There's one with lemon and mince, one with spinach, one with brandy and cream.

I'm not at home though and the book is.

The very easiest are made from really good sausages squeezed out their skins and made into balls .

DH does them lke this:
Finely chop an onion and some red chilli and mixes into the mince, then season with salt (or not), pepper, and oregano.
Make into walnut size balls and fry till just golden ie cooked through.

Tomato sauce is finely chopped onion garlic (carrot & celery optional but good for getting extra veg portion into meal) cooked gently in splosh of oil till soft, then add tin of toms. Splosh of balsamic vinegar, pinch of oregano, lots of pepper, salt (or not).

Cook 20min ish and taste - may need more pepper and/or a pinch of sugar. We blend it at this point as smooth sauce is better with meatballs than lumpy but not essential.

Sling meatballs into sauce, heat everything through, serve on pasta shapes of your choice.

Thank you we have got mince so I am going to use your ideas and sort of adapt them, thanks for the offer of the book TC but it is a bit far too travel

oh yes, adapt away - I think DH made this one up out of thin air and leftovers anyway...

One pack of mince - about 400g
One onion
garlic (as many cloves as you like)
One red/yellow/green pepper - which ever you have/prefer
A large chilli (optional)

Chuck onion, garlic and pepper in food processer and chop till in small pieces
Add the mince, with seasoning (oregano, salt and pepper - have to use a fair bit of salt)
Process again till everything incorporated

Leave to rest for about 20-30 minutes (can be longer if you want)

Form into small balls. They can be fried or - a really easy way to cook them is just to bake them. This will take about half an hour in a hot oven. They will first yield quite a bit of liquid, but this will quickly disappear and they will brown.
