fillet steak prosciutto parcels....i need some advice please.

CD did amazing version of these...filet steak, duxelles of mushrooms, wrapped in prosciutto...pan fried and then oven for 7 mins. perfectly cooked.

i want to do the same but I don't want to do last minute pan frying (dinner for 12 people, and cannot be doing with frying at last minute).

what i'd like to do is make the mushroom stuffing, put the parcels together and then oven bake them.

CD says the prosciutto won't be crisp enough.

can i do this and it still taste nice?

or back to drawing board.

I'm guessing the panfrying is to crisp up the proscuitto. How about a blast under a grill, then into the oven? So can stay on same tray? But do a practice run first.

could i fry in advance and then blast in oven for couple of minutes longer?

If I was doing this for 12 I would use two large pieces of fillet and stuff them with the mushrooms and brown them and wrap them in the proscuitto in advance and then before serving I would pan fry them and finish them in the oven and then carve them at the table.
12 individual ones will be difficult to get right imo.

Can you prepare it all including the pan frying in advance and then put them in the oven at the right moment? Put them in when the starter is finished, give everyone a glass of wine and they won't notice a 7 minute gap.
